I read in the newspaper today that the sale of Spam is way up I remember Spam from my youth but apparently it's still going strong. Does anybody have some good Spam recipes?

Spam's one of those foods you either love or you hate. We have a picnic salad (its just a cold macaroni sald with veggies and ranch dressing) that we add spam to. It blends in well like ham. I don't care much for it as a stand alone item - even the low salt version has so much salt in it.
There's actually a Spam cookbook (well, really, I imagine there are probably quite a few...) titled "Hawaii's SPAM Cookbook," by Ann Kondo Corum. It has some interesting recipes in it.

I'd never heard of the Spam cookbook. Thanks for the tip!
I found some Spam at the grocery store the other day and they have various flavors now. I had no idea.

Our family likes Spam. My mom would slice it, fry it in a pan and add BBQ to it. Then she'd toast english muffins, add the spam and top it with a piece of cheese. It was pretty darn good! When we make Fried Chinese rice, we add spam to it. Sometimes I make a dish called Sopa De Fidio and I'll put spam in it. I like it! :D

I have not had Spam in years but if I remember correctly, it wasn't too bad. It was good on an english muffin with an egg. A version of the mcd's egg mcmuffin.

I think I saw something on the Food Network about a restaurant in HI that specializes in SPAM!

Spam has always been a popular food in Hawaii for some reason, even before these economic down times.
It may be because in HI, there is not much middle class. There is a large upper class and then there is the military then you have the lower wage families (which unfortunately seems to be made up a lot of indigenous Hawaiian people - just like Native Americans and native eskimos).
