Hi, Everyone - Here's my recipe for brownies (adapted from The Low-Carb CookwoRx Cookbook":
Chewy Fudge Brownies
Spray 8x8-inch glass pan with Pam Preheat oven to 350 degrees
Ingredients:
1 stick butter 2 oz. unsweetened baking chocolate, chopped. (I use high-quality chocolate.) 1 c. Splenda 2 eggs 1/2 t. vanilla extract 1/2 c. almond flour
In a small, glass bowl, melt the butter in the microwave. Cover to prevent splatters.
In a medium saucepan, bring a few inches of water to a boil, then reduce to a simmer. On top of the pot place a small bowl, creating a double boiler. Add the melted butter and chopped chocolate to the top of the double boiler. After the chocolate melts, remove from heat.
Add the Splenda, stir til mixed.
Beat in eggs one at a time, then beat in vanilla. (The original recipe calls for a dash of salt but I don't use any.)
Gently stir in almond flour.
Pour into prepared pan. Bake 20-25 minutes, or until just set. (In my oven, 20 minutes is long enough.) Cool on a rack for 10-15 minutes. Cut into squares. Store covered at room temperature or freeze.
------------ Here's what I ate yesterday:
coffee 3 egg whites, 1 t. olive oil soy latte 1/2 c. tuna, mayo and lemon juice 3 oz. no-sugar-added candy diet, caffeine-free soda 1/4 c. hummus, 1/4 c. celery small glass white wine 1 c. salad - chicken, Swiss cheese, tomato, Parmesan cheese, lettuce, dab of Ceasar dressing

Almond flour! What a great idea. So the brownies are protein packed too!  Today - bad me, i had sugar free chocolate with pumpkin seeds, walnuts and pistachios this morning. With decaf. The nuts are good but you'd think i could have found something more nutritious than low carb chocolate for breakkie.  Dinner will be eggs with cheese and salsa and a side salad.

My day yesterday: Breakfast: eggs and coffee with half & half snack: 2 slices of cheese lunch: salad - lettuce, cucumber, mushroom with ranch dressing snack: 1/4 cup mix almonds and peanuts dinner: grilled beef patty and 1 beef skewer

yesterday I ate:
coffee 3 egg whites, 1 slice Swiss cheese 1 c. celery 1 c. tuna, mayo, lemon juice 2.5 oz. sugar-free candy 2 slices Swiss 1 glass white wine 2 c. stir fry - ground beef, peas, carrots, broccoli, olive oil Ice water with squeeze of lemon (I got this idea, as an alternative to diet soda, from someone else's post - thanks to whomever it was)

yesterday -
Bfast - 2 low carb pudding cups with a banana, decaf Dinner - Steel cut oatmeal with whole milk, sugar free maple syrup and parmesan cheese. Red wine for dessert.
Okay, not the healthiest day - no veggies. But i did get in a piece of fruit, so not a total loss. I also did 2 hours on my twist board, took vitamins and of course hydrated.
Today will be -
banana with sour cream and parmesan cheese with splenda. Decaf. Dinner - mixed salad with turkey sausage, walnuts and cranberries.

yesterday: breakfast: veggies with cheese dip lunch: salad w/ ginger dressing dinner: sausage and salad w/ ginger dressing snack:1/4c. mix peanuts and almonds
today I wasn't very good about eating, I had 3 coffees and dinner: steak and salad w/ olive oil and lemon dressing.

Thursday I ate:
coffee 3 egg whites/feta celery sugar-free candy 20 almonds hot dog, no bun, mustard wine cheddar steak
Friday I ate:
coffee 3 egg whites celery yucca, cheese, dip hummus and celery wine 3 egg whites, peas, feta those veggie chips - can't remember the name
Saturday I ate:
coffee 3 egg whites sugar-free candy salad - Swiss, olives, celery, lettuce, Ceasar dressing wine white fish, peas, coleslaw low-carb pudding
