I vaguely remember all of those shows except The George Goble Show. :-)
I think the big attraction to variety shows for me was the music. MTV and the other music channels were just coming to prominence when I graduated from high school, so the only way to see the singers I listened to on the radio was when they appeared on a TV special or variety show. Now that a lot of the older shows are being made available on DVD, my kids can see artists that I've introduced them to that are no longer alive. I also can see artists while they were in their prime, like Frank Sinatra.

Donny and Marie Show.
We had to watch that every Friday night. We also watched Captain and Tenille, the Smothers Brothers and the Flip Wilson Show.
Shows not mentioned yet that we watched were Hee Haw and the Soupy Sales Show.
I vaguely remember the Dean Martin Celebrity Roast Shows as well.Although that wasn't really a variety show but it was funny nonetheless.

I used to watch the Mike Douglas show every afternoon after school. I remember John Davidson had a summer replacement variety show I liked because I thought he was cute when I was a teen.

Hee Haw! was a fun-loving, family country and western show featuring Buck Owens, George Jones, Grandpa Jones, Roy Clark, Minnie Pearl and a host of other regulars. It was funny and clean.

I am distantly related to Jr. Samples. (what a claim to fame!).
My grandfather is Weldon Samples - and they share (or rather shared) a grest-grandmother. So that would make us like... 15th cousins, LOL!
I don't know if this counts as a variety show or not, but my favorite was always "The Carol Burnette Show".
Tim Conway is one of the funniest people I have ever seen on tv. The way he always cracked up Harvey Korman was hilarious. That man never knew what Conway was going to do next!

Technically, Carol Burnette's show was a sketch show because I don't ever remember her having musical guests. I loved that show, though.

The Dean Martin Show..!! I wish that NetFlix had The Dean Martin Show. I know it is on DVD because I've seen the infomercial with Regis Philbin. I prefer to rent DVDs rather than buy them, though. The funny thing is that Netflix mentions the variety show in their bio of Dean Martin, but they don't offer it for rent.
