Since I am talking chocolate at 5:30am, I figure it would be okay to post a recipe for candy.

1 pound white chocolate almond bark
1 bottle of candy flavoring - cherry (you won't use it all)
1 box of crushed cherry candy canes
optional - molds (I used stars and roses)
optional - a cookie sheet topped with wax paper

1) Melt the bark over a double boiler, or straight in a pot.
2) Mix in the crushed candy canes and stir.
3) Use the oil to taste - usually 4 drops should do it.
4) Stir again to make sure oil is all the way through the candy mixture.

Using a teaspoon, put the candy mixture in whatever mold you choose or drop onto wax paper.

If using the molds, you want to pick them up a bit and drop them on a hard surface, like the counter, to get them level (like a cake). Pick up the mold and look at the bottom - you don't want to see any air holes. If you do, then drop them again onto the hard surface until the air holes are gone.

Place warm candy molds or drops in the freezer to harden. (5 minutes or less)...

While you are waiting for the candy to harden - remove the rest of the melted chocolate mixture off the heat. If you need to reheat it, that can be done.

You can find molds at craft stores, specialty food or candy stores, sometimes where they sell Wilton products....

White Chocolate Dipped Pretzels

Need:
1 pound/package white chocolate almond bark

1 bag of pretzels (sticks, mini's - whatever you want)

a fork or special candy fork

pans with wax paper on top


1) Melt the bark straight in a pan or over a double boiler.
2) Keep the bark at a liquid temperature. If it gets too thick, turn the heat up a little. If it gets too thin, remove it from the heat a while.
3) Dip the pretzel into the melted bark, using the fork. Tap the fork against the lid of the pan to knock off some of the excess.
4) Place pretzel on a wax paper sheet on one of the pans. When the pan is full, place it in the freezer to harden.
5) Continue until you have made all the pretzels you want.

Variations:
Can be made with milk or dark chocolate bark, also.

You can melt some other chocolate, or other flavored morsels - like butterscotch - and drizzle on top of the pretzels before freezing.

Placing decorative candies on top of the dipped pretzels adds a little color and festivity.

I always assume that white chocolate was simply chocolate that had been dyed white...just as pink, yellow and blue chocolate are dyed.
But then I noticed that the taste is different than milk/dark chocolate. Is white chocolate dyed or is it actually a different mix and thats its natural color?

White chocolate does not contain cocoa solids; only cocoa butter, milk and sugar.

It is the cocoa solids that gives milk and dark chocolate their color and taste (the more solids, the darker the chocolate - that's what the 60% and 75% mean when you see that on some dark chocolate bars -what percentage of choc. solids they contain.)
