Some people have their Moby Dick, I have my perfect fish taco. I'm always looking. Fried or grilled, salsa or white sauce, cabbage or no cabbage...what makes a perfect fish taco perfect? Or does it depend on your mood?

I love mine poor boy style.
Blackened white fish, raw cabbage or coleslaw mix, and a sauce made from mayo and southern seasoning.

That said, it takes a special mood or pregnancy craving for me to agree or want to eat fish. I can think of 3 incidents where I ate fish by choice in the last year. I just don't like fish of any kind, really.

I'll tell you what - I've only ever had fast food fish tacos in the past (made with what I can only hope was cod), so when Sam and I (hi Amy!! <img src="/images/graemlins/tongue.gif" alt="" />) made the Chipotle-Honey Glazed Salmon Soft Tacos with Avocado-Tomatillo Salsa tonight - it turns out that's how I fish taco.

So frikkin' delicious and just the right amount of spice (just below too much). I only wish that Queso Fresco was easier to find in New York City (we used French Feta instead). Turns out that it was all but banned from the city due to 35 cases of possible TB contracted from Mexican cheeses as well as the death of a 15 month old baby.

Regardless, sooooo good. Your newsletter has now achieved "invaluable" status in our recipe book. Thanks!!

Tacos
9 ounces fish ...snapper or use cod or halibut
4 corn tortillas
1/2 cup shredded cabbage
1/4 cup jalape�o ranch dressing **see recipe below,
1 T. guacamole
1/4 cup shredded Cheddar cheese (or, use your
favorite! We use Cheddar and queso fresco)
1/4 cup cabbage ....sliced
1 cup salsa - your favorite or homemade


Jalape�o Ranch Dressing
1 pint ranch dressing (your favorite)
1/4 cup cilantro. .. stemmed .. chopped
1/2 to 1 fresh jalape�o...minced..discard seeds.. your taste

Jalape�o ranch dressing
Combine all ingredients. Mix until thoroughly. Set aside during preparation of tacos.

Tacos: Grill fish 1 minute per side. (Optional: baste with melted butter mixed with a little taco seasoning.) Warm tortillas on grill. Place fish in tortillas, then top with other ingredients. can use some sliced black olives also

Serve with warmed black beans. .. if desired

Homemade Salsa . . .Hj's

1 large can (28 oz.) of Hunts Petite diced Tomatoes and juice
1 bunch of green onions ...1/2 the stems and onions ...dice
4 cloves of garlic ...diced
1/4 c. fresh cilantros ...leaves only ....chopped fine
1-2 jalapenos de-seeded and diced
3 large green chili's de-seeded and diced
1/2 fresh large lemon squeeze juice

I put all in a blender to chop and put in refrigerator

can add salt if you like to your taste Helene Sorry forgot the green chilies. <img src="/images/graemlins/blush.gif" alt="" />

Here is one I found that is very close to what you might enjoy also

White Sauce:
1 cup mayonnaise
1/4 cup milk
4 tablespoons lemon juice
1 teaspoon garlic salt

Fish Tacos:
Oil
2 packages Tempura Batter Mix
1 can beer
1 teaspoon salt
1 teaspoon garlic powder
24 ounces boneless cod, cut into 2-inch pieces
6 corn tortillas
2 cups shredded cabbage
2 limes

For the sauce:
Mix all ingredients together and set aside.
Preheat a fryer or a deep pot halfway filled with oil to 375 degrees F.
Mix 1 of the packages of batter, but only use 1/2 the required amount of water and use beer for the remaining amount instead.
Add the beer until the batter becomes almost like a heavy cream consistency.
Using the other package of batter add salt and garlic powder, coat cod pieces with the dry mix, then dip into prepared batter.
Deep-fry for about 3 minutes, or until golden brown and cooked through.
Place fried cod pieces on warmed corn tortillas, add white sauce to fish, a little shredded cabbage and a squeeze of lime, to taste.

This recipe was provided by professional chefs and has been scaled down from a bulk recipe provided by a restaurant.

Here's a good, easy dressing for fish tacos:

1/2 cup mayo or light mayo
1/2 cup sour cream or light sour cream
2 T. taco seasoning

Just mix it up and add to fish tacos. It's also a great veggie dip, and if thinned out a little with some salsa, is a great dressing for a southwest salad--black beans, corn, tortilla strips, avacado, etc. on salad greens.

I say fried cod or prhaps haddock, fresh cilaantro, green sauce, tabaasco sauce, and fresh flour tortillas. Minimalist.

The best fish tacos I have ever had...deep-fried strips of catfish that are cornmeal breaded (lightly) and fried to a golden brown - don't overdo it or they'll get too crunchy! The sauce: 2 tbs. mayo, 2 tbs. sour cream, 1 (scant) tsp. dijon mustard, 1/2 bunch chopped cilantro, 1-2 finely chopped jalapenas, juice from half a lime, cayenne pepper (to taste),few drops Louisiana Hot Sauce...place all ingredients in a blender and blend until smooth. Shredded purple cabbage mixed with chopped cilantro and a squeeze of lime juice with a hint of jalapena is the perfect garnish; top with the Creamy Cilantro Sauce and you have a great meal! Serve with Pinto Bean Soup...yummy! PS-corn tortillas are best with this taco recipe...
