My husband and I have $4000 put aside (We both want to go to Scotland): (Particularly Caithness)

This should not be a problem. You might look at renting a small apartment for your stay. There are also good hotels you can stay in that won't break your budget.

Many accomodations in the UK provide breakfast, you can stop at delis and have light lunch/picnics to save on meal costs.
