to accompany chicken or pork:

2 cups instant rice
2 1/4 cups chicken broth
add broth to rice in a microwaveable bowl or dish with cover;
cover and microwave on high for 5 minutes;
remove from microwave and add two teaspoons of margarine (spreading it around the top of the rice);
Recover, microwave 1 additional minute and let sit for 3 minutes.
SERVE!!

I know this is not exactly "home cooking" but it saved my butt in an emergency when another side dish bit the dust (literally!) and everyone commented on the wonderful taste of the fluffy, rice! Woo hoo! Had to share <img src="/images/graemlins/tongue.gif" alt="" />

Actually Sandy,

LOL, it all has to do with a beautiful, harly Great Dane and my graceful (NOT!) self meeting midway in the kitchen. The resulting collision sent casserole into some very interesting kitchen crevices and none left for guests!

The doorbell was ringing, I was covered, the Dane was cowering in the corner trying to get underneath the diningtable and I answered the door laughing uncontrollably!!!!

Thank goodness my guests KNOW me and all was "normal" for my dinner parties! Woo hoo!

Thanks for sharing the story that went along with the recipe Kitty. Having a zoo at my home, I can understand accidents like that & its certainly handy to have a quick & easy recipe to feed everyone after this kind of thing happens. <img src="/images/graemlins/tongue.gif" alt="" />
