I made my version of this salad over the weekend & it was delicious -- perfect for the fall! It's healthy, delicious & must try :-)Pumpkin Salad with Pine Nuts Pecorino and Balsamic Vinegar
I used pecans instead of pine nuts (walnuts would be good too) and added some toasted pumpkin seeds to the salad. I also added some fresh rosemary & fresh ginger to the spice paste. I used a little freshly chopped cilantro as well at the end.
For a heartier meal, add some quinoa or couscous :-)
