Memorial Day brings picnics, and that means leftovers! Coleslaw is always a favorite. Leftover coleslaw, not so much! Here's a way to use coleslaw in a tasty wrap.

Microwave a tortilla, low-carb or full-carb, and melt some cheese on it. I used pepperjack. If you want meat, add some sausage or lunch meat down the middle of the cheese covered tortilla, about an ounce. Add 1/3 cup of coleslaw on top of the meat. Roll like a burrito or fold in half. Enjoy!

If there's more coleslaw, here's a casserole that makes a wonderful dish for hungry kids.

6 cups of elbow macaroni cooked al dente
2-3 cups coleslaw
1 pound cooked hamburger or sausage crumbled
1 can of cream style soup (mushroom or celery)
add 1/2-1 can of milk-depends on how dry the casserole seems
salt and pepper to taste.
Stir together and put in a greased casserole. Cover with cheese and bake at 350 degrees F. until bubbling all the way through.
