5 c. thinly sliced cucumbers
2 large onions, sliced and separated into rings
white vinegar
1/4 c. sugar (optional)
salt and lots of black pepper

In a large bowl, add cucumber slices and onion rings. Add enough white vinegar to measure about halfway up the bowl. Add enough water to bring liquid up to just cover the veggies.

Sprinkle all with sugar, salt and pepper; stir just to combine.

Refrigerate for a few hours before serving. A sweet 'n mostly sour delight in the south. <img src="/images/graemlins/smile.gif" alt="" />

NOTE: It is best to have a BIG glass of iced sweet tea to drink with this salad!!!!
