So hard to pick my actual favourite, at my usual Kaeng rann khao stall in Chiang mai - thats a curry over rice stall - they used to sell between 25 and 40 curries each day, all freshly made and when they ran out that was that, until the next day!
Kaeng hang lay, a Thai version of a Burmese curry, low and slow cooked pork belly or shoulder with star anise and peanuts is absolutely delicious, also has pickled garlic and fresh shallots in it and I'd often go for this one when I couldn't chose what I wanted most.
Mussel and mangosteen curry (Kaeng hoi malang buu mangkrut) , its a sour/sharp curry that plays on the contrast of its ingredients, packs a large punch of heat too. It is probably my favourite of the multitude of curries that just aren't ever on menus over here, I make a range of these dishes myself nowadays as I miss being able to get them so much!
Kaeng mussaman - this "muslim" curry with oxtail, done properly is very very hard to beat.
mmmmmmm panang curry too, with beef, is a lovely mellow and comforting dish, think thats what I'll make for dinner tonight!
