can I do a 2nd Fermentation with Mustang grapes?

I don't see why not. I don't make my own wine, but the 2nd fermentation process is used to make sparkling wine.

The Mustang grape is generally mellow and oaky. It could make a fine sparkling wine. It also blends well with other fruits and grapes to counter act their sweetness.
