What's a good easy, cool dessert for the summer? I have some friends coming over next week and would like to have something after the BBQ. I suppose there's always Jello!

Dissolve a package of your fav Jell-O with 1 cup of boiling water and add 2cups of the add-ins below for some fast and fun treats. Just whisk the ingredients together and pour into those unmatched glasses or dessert dishes:

Strawberry Jell-O and strawberry ice cream,
Orange Jell-O and vanilla ice cream,
Lemon Jell-O and frozen strawberry yogurt
or Raspberry Jell-O and raspberry sherbet.

Once they are set, guests can serve themselves once you bring them out! You can experiment with all different flavors of ice cream, frozen yogurt or sherbet.

OR~~~~~

Dissolve 1 envelope of your favorite (sugar sweetened) Kool-Aid Mix and 1 package of your favorite Jell-O flavor with 2 cups of boiling water and 1.5 cups of cold water. Stir until all is completely dissolved and pour contents into 8 (5-oz) paper cups (decorated with the theme of the day). Cover the cups with aluminum foil and insert popsicle sticks into the centers. Freeze until firm and remove the foil.

Serve on a platter and let the guests pull out their "pop" that won't drip as quickly as regular popsicles!!! (You can follow this recipe for each of red, white and blue Jell-O - then layer each color into the cups - just let each layer freeze for one hour before you add the next.)

My patriotic standby is FLAG CAKE...

Line the bottom of a 13 x 9 in. baking dish with 14 slices of (12-oz) pound cake. Then top the cake with 1 tub of whipped topping - thawed, not frozen.

Place 2 pints of strawberries, sliced and 1 and 1/3 cups of blueberries on the whipped topping in a flag design. Refrigerate until ready to wow your BBQ guests. This one makes 15 servings.

There's also - No-Bake Peanut Butter Pie, Frozen Choc. Mousse Squares and Fruity Freezes!!!!! Let me know if I can send you any other recipes!

Thank you for your suggestions! Actually one of the guys was a huge port fan so we ended up getting a variety of high end chocolates from different countries - Lindt puts out chocolate with high cocoa content from Madagascar, Guana and Ecuador - and having them with port. Yum yum <img src="/images/graemlins/smile.gif" alt="" /> And we played Clue and Cranium <img src="/images/graemlins/smile.gif" alt="" />
