For the next 48 hours, post one food item, ingredient, spice, or drink that might appear on your Thanksgiving table.

It can be traditional or non traditonal items--all are welcome!

I'll try to combine the different items into a fun Thanksgiving menu, and hope you'll join me in doing the same!

Ok, everyone, it's time to start assembling our Thanksgiving table from last week�s 48 Hour Thanksgiving Menu game!

Before we get started, a HUGE thank you to everyone that participated!! smile

I'm starting off with some side items, based on the ingredients all of us listed.

If there is an additional ingredient or spice that could be used for one of the recipes, but that's not included on this thread, I'll put it in a side note at end of each recipe. Feel free to do the same. smile

Side Dish # 1: Rosemary Roasted Potatoes

Rosemary roasted potatoes are one of my favorite side dishes during the holidays and year round. A sack of baby red potatoes and some fresh rosemary are all you need.

Ingredients:

� Roast Potatoes (One bag of baby red potatoes is what I usually use)
� 2-4 sprigs of fresh Rosemary

Directions:

1. Preheat your oven to 325 degrees.

2. Wash potatoes and cut into quarters. Sprinkle
generously with fresh rosemary.

3. Cover and cook in the oven for thirty to forty minutes, or until potatoes are soft.

Side Note: A tablespoon or two of olive oil mixed in with the potatoes and rosemary is also delicious.

Side Dish # 2: Savory Stuffing Recipe

Ingredients:

� Day old bread crumbs

� 1 large onion, chopped

� 2 stalks of celery, chopped

� 2 cups Chicken Broth

� 2 Tablespoons of Butter

Directions:

1. Preheat oven to 325 degrees.

2. Melt butter in pan.

3. Add chopped celery and onions and cook over medium low
until soft.

4. Place cooked celery and onions in a large bowl.

5. Bring two cups of chicken broth to a boil.

6. Place day old bread crumbs in the bowl with the celery and onion.

7. After broth boils, add it to the stuffing mixture. Mix well.

8. Bake for thirty minutes (covered for twenty minutes, and then uncover for the last ten minutes).

This recipe can be made several days ahead up to step seven, and then simple baked on Thanksgiving Day.

Side Note: Other variations include adding browned turkey sausage and mushrooms after cooking the celery and onions.

Here is another recipe created from our 48 Hour Thanksgiving Menu game:

Super Fast Sweet Potato Pie

Ingredients:

� Five Baking potatoes

� 1 bag of marshmallows

� 2 Tablespoons of butter

� 3 Teaspoons of cinnamon

� Pie Crust

Directions:

1. Pre-heat your oven to 350 degrees.

2. Cook the sweet potatoes in your microwave (the oven
will work fine too, but the microwave saves you some time.

3. Scoop out the inside of the potatoes into a large bowl. Add butter and cinnamon, and mix well.

4. Spread potato mixture in pie crust.

5. Top with marshmallows, and bake for twenty to thirty minutes, or until marshmallows are lightly browned.

Hello everyone!

Thanks again to everyone who participated in this fun 48 hour Thanksgiving menu game!

Thus far, here is what has been created from the ingredients listed on this thread:

Rosemary Roasted Potatoes, Savory Stuffing Recipe, and Super Fast Sweet Potato Pie (recipes can be found in the posts above).

On to some more recipes created from this thread of delicious ingredients.

Thanksgiving appetizer: Shrimp Cocktail

Shrimp Cocktail is a perfect appetizer for your holiday meals and parties.

Ingredients:

� Shrimp (I prefer the ready to eat kind)

� Cocktail Sauce

Directions:

1. Simply place your shrimp on a platter, your cocktail
sauce in a bowl, and serve!

Side Notes:

� If you have a few lemons on hand, cut them into wedges to serve with the shrimp.

� Leftover shrimp can be added to eggs to make a seafood omelet. Mix eggs, shrimp, cheddar cheese and chopped bell peppers in a bowl. Cook over low heat until eggs begin to set.

Using a spatula, flip one half of the egg mixture over the other one (similar to a quesadilla). Cook for another two to four minutes until the entire omelet is set and cheese is melted.
