I've roasted sugar pumpkins with olive oil, salt, and pepper, then scooped out the flesh and added a little butter and herbs. It makes a nice veggie side dish.
I finally roasted a few pumpkins and made pie and also a pumpkin/lamb pasta sauce. They both turned out great and the taste was so much better than canned. Now that I know how easy it is to cook with pumpkins I will never go back to canned!
