my husband and i had them b4. We both loved it. I really would like to learn how to make them. I never made cajun food b4. But when i was pregnant w/ my son it was one of the thing i craved soo much was cajun and spicey food lol. Cajun shrimp was one of my fav. lol So if would like to share it please post back.:) Thanks ~Rach

Hi Rach! Hey -- if you are going to crave something, it might as well be yummy, hot, and spicy! I have loads of Cajun recipes with potatoes as the star ingredient that I'd love to share with you but I need a bit more info. Can you describe what the potato dish was like? Scalloped with Tasso, a sweet potato dish, fried with Cajun spice or???

I want to say it is boiled potatoes or baked. Just potatoes. They cut just like would do if u were to make mash potatoes heh b4 u mashed them hehe. And it had the cajun spices on it. No sauce lol. That is the best describe it sorry if that itsn't enough info.

Rach � My favorite recipe is Roasted Cajun Potatoes, but here is a simple recipe for making boiled Cajun style potatoes. It is easy to adjust to make as many servings as you like. You can remove the potato skins after boiling or leave them on. The recipe below calls for red potatoes but you can use white or russets or my favorite � Yukon gold � peeled or not. If I made this with russets or another heavy skinned variety, I would probably peel them before cooking.

5 � 6 red potatoes, scrubbed clean and cut into 1-1/2 inch cubes
1 teaspoon sea salt**
2 tablespoons butter, cut into small pieces
Cajun Seasoning to taste
Black pepper to taste
2 tablespoons Italian (flat leaf) parsley, minced and divided

Add the potatoes & sea salt to a pot of boiling water**. Cook until the potatoes are just tender � about 15 � 20 minutes. Drain the water off and return the potatoes to the pot or a large bowl. Add the butter, the seasonings, and 1 tablespoon parsley to the potatoes and toss gently until the potatoes are coated. Add additional butter and seasonings to taste.

** You can add chicken stock base or bullion to water OR add a teaspoon of Zatarain�s liquid crab boil concentrate in place of all or part of the salt.

My family likes 'em roasted the best - in chunks or wedges. I season them about medium hot and then pass the hot sauce around the table.

You can find Chef Paul Prudhomme's New Orleans Blend at most grocery stores. The can I have has a green label. It's a seasoning salt blend (we use it on everything) so be careful when adding to already salted food. Emeril's Essence is also a Cajun Blend as is Tony Chachere's. Again, watch the salt!

I will be adding some of my favorite seasoning recipes on the Cajun/Creole site next week. I'll let you all know when they are live with a post in the forum.

Zatairains (sp?) is good too.

We've found one locally called "Rajun Cajun" red spice; but I don't know where all it might be available.

Rach-I love spicy food. I have learned alot about the history, ingredients and recipes from a few websites. You might review the recipe for the Roasted Cajun Potatoes, and go to the website noted there for Cajun spice and recipes. I have visited THAT site and found alot of useful and accurate information.
