I spent a month in Spain a few years ago. It was fabulous. Not over-touristed as other parts of Europe have become. One really cool thing to do is to stay in the Paradors - hotels that were converted from monasteries/convents/palaces.

I loved Segovia, Madrid, Toledo, Cuenca, Barcelona, Mallorca.
I was fascinated by how late they eat dinner and stay out (dinner at midnight, go out after at 2am)
