I want to wish everyone a happy & healthy Purim, and a lovely spring!
Same to you! Spring is certainly starting here (Arizona). The allergies are out - though I don't think spring is near for much of the country.
I so love Purim. I am making Hamentaschen for the judaism class at the university. I think it is so cool to be able to share Judaism through food to the students. We are even having our own Purim Carnival on Sat.
Here's a great and easy recipe my son's teacher used today. The dough was easy to bake and easy for the children to shape... it's a no fail recipe!
Sift together: 3/4 cup sugar
2 cups flour
1 1/2 tsp baking powder
1/4 tsp salt
Knead: 1 stick margarine
1 beaten egg
2 Tablespoons orange juice
Mix it all together. Form into a 1/8inch roll and chill - maybe an hour.
Make round circles, press edges into triangles. Add filling of choice.
Bake at 400 for 12 minutes
enjoy!!
