Connie, what great ideas! I've always loved tomato sandwiches, maybe because I lived in the midst of Maryland tomatoes ... here we grow them in hot houses and while good are not as good as field grown under the hot sun.
Susan, there is nothing quite as good as a fresh, warm tomato that comes straight out of the garden and jumps between two slices of bread.

The trick for my money is to slice the tomatoes very thinly - they taste so much better - no door stops for me.

Ever since I was a kid I've loved tomato sandwiches with a few saltine crackers and some seasoned salt also tucked into the bread. I like the tomatoes thinly sliced also..
That's a very creative idea.
I am so jealous of my sister-in-law! We put in patio tomatoes at the same time. She is getting oodles of succulent red tomatoes from her plant. We are feeding the squirrels green tomatoes!

Does anybody have a natural, non-fatal answer to squirrels eating tomatoes? Do you have a favorite homemade spray?
American cheese on sourdough bread with tomato slices and mayonnaise is a delicious summer sandwich.
Sliced rotisserie chicken breast with tomato and mayo on sourdough toast.
Bacon, stir fried chicken, lettuce, tomato, and ranch in a warm flour tortilla.

Connie......you know I love my tomato sandwiches! BLT's are always very good.

When the summer tomatoes are plentiful my favorite way to enjoy them is to toast two slices of bread in a pan with a little butter like you would a grilled cheese sandwich, but without the filling. I allow the toasted bread to cool down, then I coat the insides with lots of mayo. Then I add thick sliced tomato, salt, pepper, and fresh basil. Eating this sandwich is a trip right to heaven!
I am going to try this, maybe for breakfast! I have the tomatoes and basil!
Debbie, I didn't do this sandwich for breakfast, but I'll give it a shot tomorrow!
Use fresh tomatoes to make Pico de Gallo with onions, cilantro and spices of your choice to use on your favorite sandwiches.

It is lovely! If you can't get fresh tomatoes from the garden, use Sunset Campari tomatoes.

Connie - Never heard of Sunset Campari Tomatoes...but my mum-in-law grew some fab toms in her garden which were so so sweet..it's the only way I eat tomatoes (sweet, juicy and ripe.)

Are Sunset Campari indigenous to Kansas or thereabouts? I always trust your judgement on produce and would love to get my hands on these! But maybe they can't get these to little 'ol me.

Sunset Campari tomatoes are a national brand. Costco carries them. So does Wal-Mart, or so I've been told by folks who shop there. These tomatoes have the strange quality of actually tasting like real tomatoes. I wish they were bigger, but not if I have to sacrifice taste.

Connie, I've never seen them. In my marinara sauce I use chopped tomatoes by Heinz - yes Heinz is dominant over here. I use fresh hot-house tomatoes for sandwiches and salads, and they are plentiful.
I love the flavor in the Campari tomatoes. It's almost like a summer tomato!
I used Campari tomatoes on my burger tonight. So fresh and tasty!
