My old standby is just a fried egg w/ ketchup on toast or soft bread. Add bacon and it's better!

Or just a fried Spam sandwich in the morning is good, too.

But I do love Eggs Benedict which is an open-faced sandwich of sorts.

If I didn't care about my glucose levels or calories, I would really enjoy a waffle sandwich filled with bacon.

I also have made a smoked salmon with avocado salad in a pita for lunch but I suppose it would taste just as yummy in the morning for breakfast.

Breakfast Sandwich Ideas for Busy People
I don't skip breakfast but I also don't eat sandwiches all that much for breakfast, only because I skip bread when I can to limit my carbohydrates if I know I will be eating bread or pasta later. But when I do eat a sandwich in the morning I will do a typical egg, cheese, and meat sandwich, or scrambled eggs with veggies and cheese in a wrap. Otherwise a peanut butter and sliced banana sandwich or a grilled cheese is good.
To minimize carbs, I like to use fresh flour tortillas or sprouted grain bread with a lot of fiber.
On occasion I will have a peanut butter and jelly sandwich on toasted bread for breakfast.
Debbie or Lori, or anybody who knows the answer to this, what would you substitute for mortadello, if that was unavailable?

It is actually mortadella with an "a" at the end. It is considered the Italian balogna, but it is better quality. If you had to substitute something similar in taste it would be a high quality balogna, but it would not be quite as good.

Scrambled egg with cheese in a lettuce wrap and a smoothie of frozen banana, yogurt and fruit juice.

MMM! Mortadella! Delish! Better than plain bologna. Different.

I have the same issue with sandwiches, Debbie, as I need to get off of the carbs for my diabetes and for my brain health.

I got some soy wrappers and will give those a try for some wrap sandwiches.

Oh, another fork-and-knife breadless sandwich is to cook up a very thin egg omelet and wrap it around some fillings!

You could do the same with thinly sliced turkey, ham, roast beef, etc. Use the meat as the wrapper!
I used to use the meat as a wrapper years ago when I did the Stillman Diet.

I did find mortadella. Costco had what I would call the muffaletta pack. It had mortadella, salami, and another meat in it.
Grill a hamburger bun inside out. Then, add some omelet made with fresh herbs, cheese, and bacon bits. I like to smear some mayo on the bun, too! Serve it with sweet potato fries and a glass of juice. Yummy stuff, especially if you slice some of those luscious summer tomatoes and put a slice or two on the bun with the omelet.
Lori, I sometimes use thinly sliced deli meat wrapped around fillings for a low-carb treat.
I love a good biscuit sandwich. Whether it is the classic biscuit, butter, and jelly or something more substantial, that crumbly biscuit texture is so appealing.
