What creative ways is everyone using their leftovers? Any creative ideas for the leftover veggie/side dishes?

I made the usual turkey soup last night and ham buns for lunch today, as well as a ham/pasta dish. I put some of the leftover turkey gravy in my soup and it made the broth much richer and more flavorful. I will most likely freeze the remainder of the turkey and ham to use later.

Hi there! I am the new Japanese Food editor and I just posted an article for a good recipe that uses leftover mashed potatoes and turkey. It's called Turkey Korokke (Croquette). Korokke is a meat and potato cake. I always make korokke whenever I have extra cooked potatoes and leftover bits of meat.
