Hi there! I am the new Japanese Food editor and I just posted an article for a good recipe that uses leftover mashed potatoes and turkey. It's called Turkey Korokke (Croquette). Korokke is a meat and potato cake.
I always make korokke whenever I have extra cooked potatoes and leftover bits of meat. You can use any type of cooked meat like chicken, ham, ground beef, beef, seafood and fish. Korokke has a golden brown crunchy crust filled with fluffy seasoned potato and meat.
