Hi Isabel, I really enjoyed both of your articles about Mole de Xico. That is one mole i really have to try as I think I would especially enjoy the nuttiness of it! So far, my favorite mole is pipian which I make with chicken or an all vegetable version.

So glad you liked it Edward, and I do hope you will get around to trying the recipe - you won't be disappointed, as it is well worth the trouble and effort. I too love pipian, as you say the nuttiness which makes it rich without being heavy, and it is such an utterly pre-Hispanic dish.
