I made Lisa's Eggplant Mexican Style last night. Yum-o!

I cooked a whole eggplant, and then put the salsa & cheese on just what I was going to eat. I saved the rest and tonight, I'm going to put some tomato sauce, Italian spices & some mozz/parm cheese for something close to Eggplant Parmesan.

I live in an apartment and while they have grills here, they're not really close for me, so I just cooked them in the oven. I actually put them in my grill pan first, but could tell that was going to take forever, with constant watching, so I just put them in a casserole dish & popped them in the oven. Took about 20 minutes. I think if you have one of those George Forman grills, that might work.

Flax is so good for you and this recipe is a great way to eat some.

Oh I *love* that recipe!! I used to dislike eggplant when I was younger and my mom made eggplant pizzas once. We teased her about that for *years*. Now I can't get enough of it!! The Mexican Style version is simply awesome Yes we make Italian Eggplant too.

Oh, it was so good! I finished it off last night. I wish had another one!

You can make it a special treat to have once a week, we in fact have a nice eggplant in our fridge and I think that'll be done in the next day or two
