Eggplant Mexican Style last night. Yum-o!
I cooked a whole eggplant, and then put the salsa & cheese on just what I was going to eat. I saved the rest and tonight, I'm going to put some tomato sauce, Italian spices & some mozz/parm cheese for something close to Eggplant Parmesan.
I live in an apartment and while they have grills here, they're not really close for me, so I just cooked them in the oven. I actually put them in my grill pan first, but could tell that was going to take forever, with constant watching, so I just put them in a casserole dish & popped them in the oven. Took about 20 minutes. I think if you have one of those George Forman grills, that might work.
Flax is so good for you and this recipe is a great way to eat some.
