Okay, I hope that I am not being a big pest by posting these little "cheat" recipes, but I found another one!!!!!

I stood in my kitchen with fresh cherries all ready for a pie. The problem? NO PIE CRUST makings! <img src="/images/graemlins/frown.gif" alt="" />

I had flour, canola oil, no eggs, and no shortening....hmmmm, what to do?

I put 2 and 1/4 cups all-purpose flour
1/2 cup of canola oil
1/2 cup of cold milk
1 teaspoon of vanilla extract
1/2 teaspoon ground cinnamon

Mixed it all together with a fork.....it will start to get firm. I split it in 2 balls and rolled each ball in wax paper. Then, I rolled one ball in a mixture of white and brown sugar (just a tad for taste) and pressed it into a corningware dish.

In went my cherries and their syrup.....(made previously) and the second "ball" of dough (?) covered the top. <img src="/images/graemlins/smile.gif" alt="" />

I pressed the top and bottom together in pinching motions with my fingers to seal the "pie". And, popped it into the oven at 450 degrees for about 35 minutes (I have a natural gas oven). WOW!!!!!! <img src="/images/graemlins/cool.gif" alt="" />

Everyone was SO impressed and, once again, it only took me about 10 minutes to "play" it out. Thank goodness it was one of those more successful experiments. Next time I am going to try different spices and maybe sugar in the crust mix.....oh well...I hope YOU enjoy this!
