Do Enjoy the article entitled Cinco de Mayo an Ethnic Celebration

Being a foodie myself, a person who really enjoys tasty meals, I hope you partake of some of the great ethnic dishes that are not only offered on this holiday, but every day!

Since I love guacamole, and saw a simple recipe for it I thought I'd share. You can do so too!

Guacamole

3 tablespoons white onion, finely chopped
2 tablespoons cilantro
3 large avocados
4 chiles
1 teaspoon salt
2/3 cup tomatoes, finely chopped, not peeled

Topping
2 tablespoons white onion, finely chopped
2 tablespoons tomato, finely chopped

Grind the onion, cilantro, fresh chile, and salt into a paste. Cut the avocados in half, remove pits, and scoop out the flesh. Mash the flesh into the chili mixture, mix well.
Add the chopped tomato. Using the extra onion, cilantro, and tomato; sprinkle atop your guacamole.

Serve immediately.

Serving suggestions: use as a dip, a side, or spread inside a fresh, warm, corn tortilla.

Come on over! I'll ask my girlfriend to make her yummy seven layer dip, and my neighbor makes a delicious corn dish with cheese, chile, and other stuff.

Talking about all this food, I'll have to stay over there on your exercise site! LOL

Stop it! You are killing me but if you do eat that you can certainly burn it off with my workouts or better yet do some intense cardio intervals and strength training before you eat it and it won't get stored as fat at all.

Hey April,

I learn something new everyday. The article was really good. I did not know the complete history behind it, but I do now. In addition, the recipe I'll be trying on Mother's Day, I'll let you know how it turned out, and yes I will be visiting Monica's site for exercise tips to get the pounds off after eating.

LOL April @ Beyonce, that is my dream! I love guacamole. I eat it with carrot sticks.

So Monica, are you saying, if I do a workout first and then eat, the fat won't go on me? I hope I got that right! Will definitely give that a whirl!

Linda, if that's what Monica is saying then we are in the clear--whoo-hoo!

I'll have to try the guacamole with the carrot sticks instead of tortilla chips, less fattening. Thanks for the tip Linda!
