Cinco de Mayo an Ethnic Celebration Being a foodie myself, a person who really enjoys tasty meals, I hope you partake of some of the great ethnic dishes that are not only offered on this holiday, but every day!
Since I love guacamole, and saw a simple recipe for it I thought I'd share. You can do so too!
Guacamole
3 tablespoons white onion, finely chopped
2 tablespoons cilantro
3 large avocados
4 chiles
1 teaspoon salt
2/3 cup tomatoes, finely chopped, not peeled
Topping
2 tablespoons white onion, finely chopped
2 tablespoons tomato, finely chopped
Grind the onion, cilantro, fresh chile, and salt into a paste. Cut the avocados in half, remove pits, and scoop out the flesh. Mash the flesh into the chili mixture, mix well.
Add the chopped tomato. Using the extra onion, cilantro, and tomato; sprinkle atop your guacamole.
Serve immediately.
Serving suggestions: use as a dip, a side, or spread inside a fresh, warm, corn tortilla.
