After yesterday's festival of rich foods, I needed something plain, yet interesting. A broth bowl absolutely fit the bill! I chopped a cup of veggies from our vegetable tray. I used carrots, celery, peppers, Romaine lettuce, onions, and cucumbers. I got a can of chicken noodle soup, and added tofu cubes. When the soup and tofu was boiling, I poured half of it over the veggies. After adding teriyaki and sambol, I let the soup stand for 5 minutes. Quick, easy, and delicious! Plus, it is a low cal, low carb meal.
