I'll get things started with this easy and fabulous recipe for stuffed mushrooms. It's my husband's favorite!

Ingredients for Stuffed Mushrooms:
1 pound mushrooms
3 Tablespoons melted butter
8 Tablespoons soft butter
2 cloves of minced garlic
6 Tablespoons of shredded Jack cheese
2 teaspoons soy sauce
2/3 cup finely crushed cracker crumbs

Instructions for Stuffed Mushrooms:
1. Remove stems from mushrooms.
2. Brush mushrooms with melted butter.
3. Mix together the soft butter, garlic, and cheese.
4. Add soy sauce, and cracker crumbs and blend to make a paste.
5. Fill mushrooms with this mixture.
6. Set in a baking pan and broil for about 3 minutes until hot and bubbly.

Garbage Bread.

Roll out some dough, coat it with a butter and herb mixture of your flavor choosing. There are no right and wrong measurements for this. It is all based on your personal preference.

I throw a couple of handfuls of a couple of different cheeses, cooked sausage, pepperoni, ham, bacon, onions and peppers if you want. Add whatever you want to it, roll it up, fold it, whatever is easiest to do, rub he outside with an egg wash and bake in oven at 350 for about fifteen minutes.

Take it out, slice it up and serve with a side of marinara or spaghetti sauce for dipping.

I recently made this healthy appetizer and everyone wanted the recipe:

Eggplant Pizza

I large unpeeled eggplant cut into 1 inch slices
1 cup seasoned bread crumbs
egg whites
1 cup marinara pizza sauce
I oz. mozzarella , sliced or shredded
Your choice of toppings: bell pepper, mushrooms, Canadian bacon, basil, pepperoni, parmesan cheese, sliced tomatoes

1. Preheat oven to 350 degrees. Spray a cookie sheet with oil spray.
2. Dip eggplant slices in egg whites and then coat with bread crumbs.
3. Place slices on a cookie sheet and top each with a small amount of olive oil.
4. Bake for 10 minute until crisp. Turn over. Top this side with a small amount of olive oil. Bake 8 more minutes until this side is crisp.
5. Layer sauce, toppings, and top with cheeses. Bake another 5-8 minutes to melt cheese. Serve warm.
