Here's an idea that I also posted in the Sandwiches Forum.
For a cooling drink with a spicy sandwich try a cold yogurt drink. Mix about 1/4 cup of Greek yogurt with 1/2 cup of juice. I like using chilled nectar. My favorites are mango, peach, and pear.
Put the yogurt in first and slowly stir in the nectar using a fork or tiny whisk. Instant yumminess in a cup!

We grilled chicken for the 4th. I also made potatoes that were low on grease. Boil small red potatoes. Slice them with or without their skins. Marinate the potatoes in a small amount of Italian dressing. Then, put them in a foil pie plate and put the plate on the grill-uncovered. Yummy stuff!

When you are making canned tomato soup, replace the water or milk with V-8 vegetable juice.

Find some great summer tomatoes and green beans. Slice the tomatoes. Cook the green beans with some new potatoes, onions, and chicken sausage. Serve the tomatoes as a salad with or without dressing.

Use the bones and skin from the chicken to make broth. Boil the bones and skin with celery, onion, mushrooms, carrots, and pepper. Use the broth to make rice dishes, chicken and dumplings, casseroles, or chicken vegetable soup.

For dessert, have something that has solid nutrition. Puddings made with milk and eggs, tapioca, fruit with yogurt or goat cheese are all good choices.
