I had pickled beets tonight with my open-face sandwich. I love my Safie's Homestyle Pickled Beets. They are just perfect! Plus, I just take them out of the jar...how great is that??!!

For a cooling drink with a spicy sandwich try a cold yogurt drink. Mix about 1/4 cup of Greek yogurt with 1/2 cup of juice. I like using chilled nectar. My favorites are mango, peach, and pear.
Put the yogurt in first and slowly stir in the nectar using a fork or tiny whisk. Instant yumminess in a cup!

It's not the best idea to drink water/cola etc to cool down a fiery palate I am told, for that's the way to heighten the burn.
Your suggestion above Connie sounds just right especially if you use full cream yoghurt ... apparently it's the fat content in any drink that helps soothe a chillie tongue! And if here is nothing to drink nearby, use butter.
I am going to try your idea for brekkie tomorrow thanks .. have a fruit cocktail mix at the moment to try.

We grilled chicken thighs for the 4th. You can use grilled chicken for tasty sandwiches!
I also made potatoes that were low on grease. Boil small red potatoes. Slice them with or without their skins. Marinate the potatoes in a small amount of Italian dressing. Then, put them in a foil pie plate and put the plate on the grill-uncovered. Yummy stuff!

For me the ultimate comfort food is canned cream of mushroom soup made with whole milk and garnished with a sprinkle of pepper and a pat of unsalted butter.
