Other than chicken salad sandwiches, what can I do with a couple of pounds of chunk chicken? I'm open to chicken salad IF it's got ingredients other than just mayo or mayo substitutes.

You can make some pretty good wraps (hot or cold) and paninis with chunk chicken.

~ Toss it with barbecue sauce and then add your choice of toppings.

~ Add it to romaine lettuce, parmesan cheese, caesar dressing, and cracked black pepper.

~ Warm it up with sauteed/grilled onions, peppers, mushrooms, and add cheese.

~ Toss with a little bit of light honey mustard dressing and add fresh veggie toppings like tomato, lettuce, and pickles.

Chicken combines well with many flavors. You can also make a chicken soup to enjoy with any sandwich, and there is always chicken pot pie!

Thanks so much. Sometimes I can get really stumped for ideas. I'm trying to cook with what I already have in the house instead of constantly going out and buying extra food.

I'm going to put together a pan of queso (cheese) chicken enchiladas and freeze half of them. Most of what I cook are Mexican dishes and I realized I already had the ingredients! I lived for several years in Mexico and picked up a lot of good recipes. This time of the year it is very welcome for the oven to warm up the house.
