When you have finished most of the meat on a rotisserie chicken, add the bones to a large pot of water with some celery, onion, and carrots. It makes great soup stock.

I made some wonderful greens. They were fresh collard, mustard, and turnip greens. I cooked them with some peppered country bacon ends that were not too fatty. Then, I added some hot sauce and bitsy bit of sugar. They were yummy!

Right now I have leftover nacho cheese from Christmas Eve and leftover mashed potatoes from Christmas dinner. So, I am cooking some broccoli and onion until it is very soft. I'll mash the broccoli and stir in the mashed potatoes and nacho cheese. I'll add a bit of sharp cheddar and whooppeee, it's broccoli cheese soup (with a bit of spicy heat)!
