Lentil soup can be flavored in a variety of ways. Also, served with a cheese sandwich, it can be a complete meal.

Chop veggies for the week and store them in containers that are easy to access in the fridge. Pull them out to eat raw for snacks or lunches. Sautee or roast them for meals. It's easier when the are already cleaned and cut.

Breakfast doesn't have to be the same old cereal. Spice it up with beans, rice, and chicken sausage.

Try spicing a salad up by topping it with muffaletta olive salad, instead of a heavy dressing. I like to use an olive salad by That Pickle Guy. It comes in a jar and is good on salad, sandwiches, and pasta.

Leftover boiled potatoes from a shrimp dinner can become a tasty part of tonight's meal. Rub each potato with olive oil. Place them on their sides on a foil covered cookie sheet and slice them almost all of the way through. Make the slices about 1/4 inch apart. Drizzle olive oil over the top and into the sliced areas, sprinkle with garlic salt, and place fresh sprigs of rosemary or tarragon between the slices. Bake at 450 degrees F. until they are heated through and crispy on the outside.

If I have salad that is still good, but it has lost its crunchiness, I thinly slice it and put it into soup.
