Oh dear! I forgot to add this to the article as promised so I have corrected that now - but anyway, here below is what is there, so enjoy it or please, add your own notes or recipes for Salsa.
SALSA FRESCA a la Kimmy
Yep, my fried Kimmy gave this recipe to me and while it seems very similar to many I have come across, I follow it carefully and get yum results every time I make it – guests are always ready for more. It also makes a really great ‘sauce’ over hot pasta drizzled with olive oil and salt.
What you need and what to do -
2-3 medium beef tomatoes – I use big red fleshy beef tomatoes, make a concasse by peeling and de-seeding them and then cutting the firm flesh into small dice – go as chunky as you want to.
1 small onion – I use mild yellow onions, finely diced.
Garlic – use as much as you think, I use two cloves finely chopped.
**Pour boiling water over the mixed diced garlic and onion, leave for 5 minutes, strain then cool.
Chillies – use as much as you want, I use milder Rocotillo chillies but the most popular for that explosion of heat are Serranos or Jalapenos. Use 1 to start then add more as you wish.
½ cup of chopped cilantro
2-3 tbls freshly squeezed lime juice (lemon juice is just not the same though you can add a tsp of lemon zest if you want to, I do).
½ tsp ground cumin
Salt (important) and freshly ground black pepper
Mix all the ingredients together in a bowl and allow to sit a while before serving. I serve it at room temperature and if it comes out of the fridge the next day, drain any juice that has gathered, adjust the lime juice/chillies and salt and add a bit of extra fresh cilantro on top.
P S – If you need to make a lot (for a party say) then I suggest you make the recipe as many times as you need to – do not just double or triple up on the ingredients … it just doesn’t work.
