Creating a Sandwich Meal

It's not hard to create a sandwich meal when you start with just one thing that you really want to eat. Then, build from there.

Just today I pulled out one of the freezer drawers and staring me in the face was a package of tortillas - quesadillas here we come along with a salad.

Sounds great! One of my favorite quesadillas has Mexican cheese blend, pepperjack, thinly sliced onions, bell peppers, zucchini, tomato, and shredded lettuce or spinach. Mmmmm!

Sometimes you can see something that just piques your imagination. On Facebook this morning, I saw cheese stuffed meatballs. Immediately, I had ideas for two new recipes running through my head. Look for your creative opportunities.

We had cod cakes on buns with tartar sauce. That has quite a bit of carb and fat, so our side dish was simple. Kale and cauliflower have similar flavors, but contrast well in texture and color. They taste especially yummy with cod cake sandwiches.

Today I had a lovely sandwich meal at the Nelson-Atkins Art Museum's Rozzelle Court restaurant. The half sandwich was a panini that is described as Smoked Ribeye, Caramelized Onions and Mushrooms, Blue Cheese on Roasted Garlic Bread.

Here is the salad that I chose: Artichokes, Tomatoes and Kalamata Olive Salad with Olive Oil Dressing.

I split a decadent dessert with my niece. It was a gooey bar-type confection with a crumb crust, chocolate, caramel, and a pretzel topping. We had a flavored water with the meal. It was a cooling cucumber-mint.
