I purchased a lot of terrific produce today at the Farmers' Market. The fruit is lovely this time of year. I bought peaches, cantaloupe, and a small watermelon. The veggies looked incredible. If I had more money, I would have purchased twice as many. I picked up some peppers, green beans, summer squash of several varieties, eggplant, cucumbers, and small yellow pear tomatoes.

I work today, so I need a hearty meal for my lunch. I made brown rice with celery, onions, squash, seaweed, shrimp, and teriyaki sauce. It took about 10 minutes to make. I use the instant brown rice. It has the same amount of carbs and fiber as the one that takes 45 minutes to cook.

Muffins are just a fantastic way to improve your nutrition and take stress out of your life. They are ready to be a meal on-the-go, a snack, or the basis of a breakfast or lunch.
I'm making some new muffins today. I'll use carrots, apple, and squash to add texture and taste.

I buzzed up a pound of carrots in my Ninja processor with some Mandarin oranges. Then, I mixed it with Prairie Gold whole wheat flour, brown sugar, oil, eggs, and other tasty cake-making delights. Baked in a tube pan at a low temp, it is a delightful thick and rich cake. Plus, it is full of fiber, vitamins, and minerals!

Try using Triple Cherry Blend frozen cherries to cool summer citrus drinks. Use the cherries in place of ice cubes. After the drink is gone, you have some wonderful fruit at the bottom of the cup.

Oven roasting veggies in olive oil is tasty and good for you. Plus, it is sooooo easy!

I cover a jelly roll pan with foil and add olive oil. Then, I throw the veggies on top of the oil and mix them about to coat the veggies. A quick sprinkle of salt and pepper and I pop the whole thing into a 475 degree F. oven until the edges are brown and the veggies are soft. How long this takes depends on what is roasting, how large the pieces are, and the amount that you've put on the pan.
