Yesterday, I made rice wrapper rolls. They were full of chopped veggies and baked tofu. I also made a peanut sauce with chunky peanut butter, teriyaki, and flavored vinegars. They were so delicious. I need more practice with rolling the wrappers. My skills are rusty!

Kale and cauliflower are full of vitamins, minerals, and fiber. They taste great, too! Add a bit of hot sauce and olive oil, then enjoy yourself.

Today I made an omelet. It had half a pattie of lean sausage, 3 crumbled tater tots, 1 egg, and 2 tablespoons of cheese. I served it with 2/3 cup of sliced cucumber and peppers.

I am making Chicken Enchilada Casserole today. It has rotisserie chicken, chopped green onions, green chilies, enchilada sauce, corn tortillas (not too many), and some cheese.
It's easy to make and tastes delicious! Serve it with a salad or some cooked summer squash and onions.
