Tonight, I am having a Chef's Salad. It has oak leaf lettuce, iceberg, red cabbage, carrots, yellow peppers, cherry tomatoes, sliced cucumbers, slivered onions, grated cheese, ham chunks, blue cheese and ranch dressings. With a small plate of pinwheel sandwiches, it's a satisfying meal.

We had collard greens tonight. Tomorrow I am roasting veggies for the week. We have tri-colored cauliflower, butternut squash, Brussels sprouts, and Crimini mushrooms. I'll make enough for 3-4 days.

Cut an apple in half and core it and place it in a microwave safe bowl with the cut side up. Add honey butter and a sprinkle of cinnamon and brown brown sugar. Cover and microwave until the apple starts to get soft. Let stand for 5 minutes. Remove the cover and spoon the syrup over the apples. Squeeze a little lemon over the apples, if desired. Microwave for another minute or two and leave them in the bowl until you are ready to serve the apples. Place each half in its own bowl. Spoon syrup over the apples. Top with a dollop of Greek yogurt and drizzle with the rest of the syrup.

Chop mini cucumbers, yellow grape tomatoes, and sweet onions. Drizzle this with Newman's Own Light Balsamic Dressing. Toss to combine the ingredients. Refrigerate for an hour and serve with a grilled tuna salad sandwich.
