I realize that there are lots of holidays in February, but at my house I always celebrate Groundhog Day by serving a dish containing "ground hog" (pork). My family would be sorely disappointed if I didn't make something special. This year I made a pork meatloaf containing rice (so it sort of looks like the animal), surrounded by vegetables.
