It's a simple sandwich, but one that can show different personalities with the change of a condiment. A Grilled Salami and Provolone Sandwich on sourdough bread can be the basis for a delicious sandwich meal.
I've had both salami and pepperoni in grilled sandwiches, and both are delightful. I usually would not use condiments on either of these, but a splash of oil/red wine vinegar would be good, now that I think of it.

Many people like that combo on sandwiches, but I never had that growing up. I am very picky as to which sandwiches will even get mayo, too. Seems that I like most sandwiches without condiments at all!
