Hello Everyone ... at this rate I shall have to grow more mint! Thanks for the recipes. Here is another.

Iced Green Mint Tea (another view)

To serve two for tea take two Green tea bags, 2 1/2 cups of boiling water, 2 Tablepoons of honey, mint leaves to taste, a cinnamon stick and a squeeze of fresh lime.

Put all ingredients into a glass jug, mix about and when strong enough, remove the teabags. Allow to cool, pour through a strainer to remove the leaves etc, refrigerate and serve in tea glasses with some extra fresh mint for decoration.

Oh so refreshing. I make lots of this by request and just use this recipe to taste - i.e. use a teabag per person and double up etc on the other ingredients as I need to. Enjoy.

Hi there one and all,

Was at a braai over the holidays and was served this - so I mugged my hostess and she sent me the recipe today ... oh so simple and oh so delicious. Many of you have probably made it before, but I haven't and now will do so, and not only at barbecue time. Cheers.

To serve about four/make four parcels...

Minted Potato parcels

25 baby or new potatoes par-boiled and cut in half
1 cup roughly chopped mint (dried won't work)
2 limes quartered (lemons not the best but an okay substitute)
4T olive oil
4T butter
Salt and black pepper

Mix all ingredients, take squares of greaseproof (sandwich) paper, place on top of squares of foil. Divide the potato mix up, 2 lime quarters to each parcel. Tie or fold the parcels and place on the coals. Cook for around 15 - 20 minutes and serve as is. Enjoy and let guests open up the parcels themselves after serving.

Be prepared to send your guests the recipe.

Smile now and go and plant some mint if you haven't got any! Ta.
