Hello there Everyone - Do you grow your own herbs - or a small selection at least? And is MINT amongst them? Well what do you do with it - how do you use it? Please share your favourite recipes and uses that you have tried and tested at home for anything using any kind of mint. Cheers then, Lestie, Container Gardening

Hi Zesty Lestie,

When the weather warms up here a bit, this will be the dish that I will be making that utilizes loads of mint:

Couscous Salad with marinated grilled chicken breast, roast yellow and orange bell peppers, roast red and white onion, roast zucchini, tomatoes, green olives, evoo, and mucho of Maria's container grown mint.

Is it possible that Rachael Ray, that Food Network star, has not made her bubbly presence felt in SA? E-V-O-O in Rachael Ray speak is Extra Virgin Olive Oil.
If you want the Couscous Salad a little tangier add either fresh lime juice or balsamic vinegar.

In my days as the chef at the Harvard Bookstore Cafe, to give cold soups a refreshing zip, I used to add mint to such ones as Champagne-Strawberry Soup, Creamed Blueberry Soup and Yogurt-Cucumber Soup.

Here in windy Churintzio which year round makes Boston and Chicago seem still in comparison, the morning temperatures have been in the high 30s and low 40's Fahrenheit which is pretty cold for here. So much so, that in nearby Zamora the potato and strawberry crops aren't fairing so well. None of the houses in most of Mexico have any heat source-we are fortunate that our humble abode is made mostly of well-insulating adobe. It's windy and cold enough that my birds are insisting that they stay in the house rather than their normal daytime perch, the courtyard!

Instead of lunch, could you make it for dinner? We are having Dried Fried String Beans with Pork, Minted Lentil Stew with Melted Queso Oaxaca, Toasted Baguette with Cream Cheese and Caramelized Red Onion, and for dessert, Cannonball Watermelon.

In India, we use mint chutney as a condiment - it is refreshing & cools the palate as well :-)

Oh dear I could have worked out evoo as of course it is a standard in anybody's kitchen. Thanks.

Those recipes you mention, especially the cold fruit soups sound really tasty - but I have never really understood the reason for cold soup. Why call it soup? Soup should be hot I say! Call a cold soup something else like soupcouli ... super cool to eat and oh so in fashion! Ag I am just messing around now - still, I am for the soup-is-hot faction, who is on my side? Grinning...

Sure Lestie! Fresh mint leaves (along with fresh cilantro leaves, fresh curry leaves & fresh dill to a lesser extent) is one of the fresh herbs used in traditional Indian cooking! Indian cooking is mainly well known for its use of dry spices in both whole & powdered form :-)
