These are so simple to make. I have used potatoes and onions. Those are great. So are the ones made with squash. A sweet/sour kind of sauce is excellent for pakora pitas.
Sometimes I add frozen chopped spinach to the pakora mixture. As the spinach thaws, it releases moisture. I love the spinach with onion and summer squash pakoras. It's also fantastic with grated onion and potato pakoras.
