It's better to eat right and save money by not developing nutrition issues down the line. I've heard that enough fiber a day can prevent colon cancer. Antioxidants can combat free radicals, and the good fats will improve your blood composition in the fight against heart disease.

If you can't afford health care, you need to plan to spend more money on fresh produce, whole grains and lean meats. You need to eat less sugars, processed foods, white flours and fatty meals.

You guys know all this. The doing it part is the hardest.

What did you eat that was healthy today?

I'll start: last night I had a big salad, and then for brunch today I had more salad, with hummus and some sugar-free crackers. I had lean turkey meat in with my veggies,and I also put cranraisins in them, along with avocado (good fats).

I also had my vitamins today, which I often forget to do.

I was bad the night before and had a plate of terrible bar nachos. frown I try to keep such things down to a minimum.

How did you guys do? Is there something you can eat today which is healthy?

This morning I had a nice bowl of yogurt, oatmeal and fruit. Yum!

Tonite I will have a salad with avocado and turkey, and a two egg veggie omelet.

About the only thing I have had today that could be considered
healthy was my vitamin, and I take it every day.

Haven't had dinner yet, so hope to eat healthy for that.

Okay, I did NOT have a healthy lunch so I will not go there smile

But my breakfast was--and is always--healthy and frugal. I have oatmeal and a mashed banana with a splash of soy milk. It's my "breakfast for champions" and I have been eating it since my adopted sister's father made it for me when I was about 3 years old. Only of course he used cow's milk way back then in 1973.

I've recently developed my own salad bar in my fridge. I've chopped salad vegetables and made salad dishes and put them in multiple plastic containers in my fridge. So each day now I'm having a different salad. Yummy and healthy.

I try to eat healthy every day. This morning I had scrambled eggs with chopped tomatoes and some cheese. For lunch I had half of a peanut butter sandwich on honey wheat bread and a pear. For dinner I had some cauliflower along with cabbage I sauteed in a little olive oil with onions, salt and pepper.

Peggy, your dinner sounds yummy!

I had a fish taco with veggies, instead of italian food....so, that was healthier. The fish was fried though. But this was a special occasion.

As I OBVIOUSLY, lol, have insomnia - I wish it weren't so, but true!

This is how I wind down among other tricks here and there like aromatherapy, candles, accomplishing just anything, even if it's small.

But today/night/morning - take your pick, I made Vegetable soup from scratch. Like from start to finish, no fat, no meat (sorry - won't give up my salt) but needed very little for this dish as I had "Farmer's Market" veggies, blanched, packaged, wrapped, some (cant think of the word but when you dehydrate and revitalize).

So anyway, that's what I had, plus some pumpkin and a Bocca-Flame-grilled burger w/ of course - lots of pickles wink

Karen, that sounds like good eating.

Last night I had a banana for dessert.

For brunch today I ate my fish taco leftovers from last night. There were veggies involved, and I added chia seeds for fiber.

Also had decaf coffee.

Tonite will have Trader Joes Turkey Meatloaf with whatver veggies are left in the fridge.

Last night I ended up having red wine and cheese for dinner.

This morning I had a banana and decaf coffee. I will have the turkey meatloaf for lunch today with whatever veggies I can scrounge up from the house. We are leaving here and moving back to AZ, so I want to eat up the food I already have before buying new stuff.

I'll add chia seeds to the meatloaf to increase my fiber intake.

This morning i had lasagna leftovers, but i made sure to add a huge bowl of romaine lettuce to that. No dressing - i just ate the lettuce with the lasagna and salt/pepper/parmesan. It was delicious, and i at least got in several portions of a veggie.

I'll have a banana and yogurt tonite, i think.

Yesterday I sauteed shrimp and veggies in olive oil and put it over whole wheat angel hair pasta. It was so good!

Tonight for supper I'm heating up leftover baked zita - like lasagna - and pieces of baked chicken. Tossed salad with ranch dressing alongside.

I didn't eat healthy today, or lately in general. Been doing so much moving that somehow the healthy habits seem to come last. frown

I did have a banana today, and some turkey. Everything else I ate was pretty much starchy food.

Last night I had milk for dessert, which is more or less healthy.

Today I had some cheese and wheat bread with raisins. I really could be doing a better job with healthy food, but I don't feel settled in here yet in florida, and haven't gone out to get food even once. So i am kinda eating what is here already.

At least I am getting in daily workouts.

To me you seem soOoo nature bound, like that's your elemental smile

About the food though? I too, do the "food-n-go!"

I'm scattered all over the place right now. So, I make stuff in advance, like what you suggest.

For me, I cut and put into containers (in the fridge) - like one for cheeses (not just one, but a myriad of different types). I'll have others for say broccoli, carrots, roasted potatoes and SOUPS (oh my gosh) how wonderfully easy that is!!

So, I'll make a big bunch! But, I'll ladle 3 cups of whatever, broccoli cheese, veggie soup, clam chowder, or my favorite, lol, chilli!!

So, when I'm stressed or just not feeling well, I've even made an entire chicken for a great noodle soup, stock or broth...but the point is - it's there when I'm just not "feelin-it." Not up to cooking wink

Today, especially though, I...have to think...OH - roasted mashed or red-smashed potatoes w/skins, spinach veg. soup (kind of like minestrone) baked beans, ham and a croissant (but only half, lol).

In colder months, I'm more into warming/comforting foods, like stuffed shells (that's probably next on my list wink homemade marinara and garlic bread OF WHICH, my husband most often eats the greatest.

Per request though, it's Talapia and shrimp scampi w/angel-hair pasta. He shares that reg. spaghetti is just to heavy for him to eat. A salad of course (olive garden dressing)!

I follow vegan diet, so I have a big salad for lunch every day, plus cooked greens such as turnip green, collards, or mustard greens. For breakfast I usually have an avocado breakfast sandwich.

My not-so-healthy choices are sweets, such a chocolate fudge (using vegan chocolate chips) and coconut milk ice cream, and even though I make them with raw sugar, I feel that they are the things I must try to keep to a minimum.

I use mostly fresh, unprocessed foods, except for vegan cheese (Daiya), vegan butter (Earth Balance), and sprouted grain bread (Ezekiel)--again items I try to keep to a minimum. I do use some meat analogs like Yves' Meatless Ground Round but very seldom.

That may be more than you wanted to know.

I made sure to put big handfuls of arugula and spinach in with the elk my friend and I cooked today. We had garlic mashies also (not healthy), but did add romaine lettuce as a side dish.

So, not too bad. It was all delicious.

I didn't eat anything especially good today, but nothing too bad, either. I did add a large bunch of chopped cabbage to my bean burritos, which helps.

I've been avoiding food with trans fats in them for years, but am now taking it seriously - i even look in the ingredients lists for anything with partially hydrogenated whatevers. If it's in the list, I put the food back on the grocery shelves.

I was shocked yesterday at how many typical foods on the grocery shelves have partially hydrogenated fats.

I had two egg breakfast burritos. It's good for me to get in some protein, but the cheese, wraps, potatoes and meat chunks offset the advantages of the eggs.

Bananas with cinnamon in some ice cream. The ice cream isn't a health food, but i always feel great after eating bananas.

I did add some oat flakes and flax seed to add fiber and omegas, and the cinnamon is an antioxidant. The ice cream also had pecans, which is good.

Today I am going to saute up some marinated chicken breast chunks and add it to my ceasar salad. I don't use just romaine lettuce, but also scallions, cucumber, and grape tomatoes. I sprinkle with black pepper and then top with fresh shredded parmesan cheese. Yum!

I added a ton of extra lettuce and some cranberries to my grocery-store made hoagie today, to make sure I get more servings of fruit and veggies in. It already had tomatoes and spinach in it, and it was on a wheat roll (so got in some fiber too). I took vitamins with it, and I am working on hydrating.

I've been using my Dollar Tree chore chart to make sure I get my important amounts of nutrients each day. This is a really good system, and I am so glad I started it.

It's that time of year to enjoy fresh fruit and veggies from the local farm stand. It is both healthy and less expensive than store bought. I can save a few dollars and eat well.
