Today I attempted creating a new candy recipe, sort of a cross between a hard candy-nut crunch and sugar coated almonds, with chocolate added. Well, I overcooked the sugar mixture, resulting in chocolate sand that won’t adhere to the nuts. Darn! I’ll have to try again another time.

Meanwhile, here is my tried-and-true recipe for the best fudge you'll ever taste. Enjoy!

Oh Caitlin! Caitlin! Caitlin! Why did you post this. I'm taking a week off from work Sept 1st, will try this. My husband is a fudge lover, so long as it's not too bitter. He's more of a milk chocky guy! smile

I remember making fudge way back in the day in England growing up there, but I never used a candy thermometer. I'm assuming that was a different technique. And I do remember that after you mixed everything together, you had to get it in the pan fast in order to chill it or it would seize up on you.

Was always fun to make and relatively easy for a novice cook back then.

Caitlin? Forgot...I'm not much of a "baker" baker...I have no patience at the stove sometimes...but some things I "bake" great. I guess too many flops made me paranoid. But I keep trying to focus. lol...I'm a great "cook" though! smile

Hi, Allyson,

OH, you don't have to worry, no baking for this fudge! ;-D

You can make this sweeter if you like--the original recipe calls for 2 cups of sugar! Ack!--but I prefer it a little on the bitter side. It's actually less bitter than many chocolate bars that are about 70% + cacao (or whatever that measurement is!)

Cute photo of you! I used to live in Manhattan and then Queens, many eons ago! I much prefer the country these days, although my present CA home is city/suburbia, right near the major freeway. Sigh.
