Oh Caitlin! Caitlin! Caitlin! Why did you post this. I'm taking a week off from work Sept 1st, will try this. My husband is a fudge lover, so long as it's not too bitter. He's more of a milk chocky guy!
I remember making fudge way back in the day in England growing up there, but I never used a candy thermometer. I'm assuming that was a different technique. And I do remember that after you mixed everything together, you had to get it in the pan fast in order to chill it or it would seize up on you.
Was always fun to make and relatively easy for a novice cook back then.
