What sandwiches do you make in the summer when the weather is hot? How do you beat the heat, instead of cooking and heating the house up?

Hi Connie,
Maria just brought back some tahini from San Jose, CA so that we could enjoy some hummus and chopped cucumbers on teleras or bolillos.
Another appropriate sandwich for this caliente time of year would be imitation crab with corn niblets and pico de gallo on a pan rustico.

I like those ideas, edwardd1. Cucumber always refreshes! The crab would be delicious without any cooking, too.
I like smoked salmon with chopped red onion, chopped tomato, cubed fresh avocado and fresh lemon juice.

Those all sound terrific and cool...as in not hot! LOL I like to buy a rotisserie chicken and make sliced chicken sandwiches or chicken salad to put on crackers or sliced veggies. Cucumber is tasty with a dab of chicken salad.

Fresh, wonderfully ripe tomatoes with home-made pesto Connie - fragrant, juicy and definitely no cooking involved. I'd take that and add a thick slice of fresh mozzarella to it. Yum!

I just saw a commercial for a chicken sandwich with cheese, guacamole and Fritos corn chips. I adore crunchy textures so this sounds yummy to me!

I make chicken, egg, and tuna salad sandwiches more so in the summer than when it is cold outside. I enjoy cucumber sandwiches with mayo, salt, and pepper on light toast. I also like tomato sandwiches with thick slices of fresh garden tomatoes, mayo, salt, and pepper.

It's a little early for tomatoes in New England, but they are growing and should be available in a month or so.

There's nothing like a fresh tomato sandwich with only fresh, sliced tomatoes, mayo, cracked black pepper and sea salt on any type of bread!
I just saw a beautiful picture of an open-faced rustic crostini type of bread, slathered with fresh pesto and topped with sliced heirloom tomatoes. A sprinkling of feta or shredded mozzarella or parmesan.
Nature's bounty!

I love fresh bakery white bread or sourdough with summer tomatoes. Mayo is always necessary! Plain tomatoes and bread are great. BLTs are the ultimate summer sandwich. I also enjoy American cheese and tomato on bread with mayo.

Jordan just had her wisdom teeth out, so I made fresh chicken salad (mine is just chicken, celery, garlic powder, and mayonnaise) so it is very smooth and easy for her to eat. We had it on fresh croissants - also very soft, so she can eat it.

I had the BEST sandwich last night! I finally got my hands on some fresh farm tomatoes. The two tomatoes I selected were a big variety, bigger than what would fit in the palm of your hand. I wanted to have the tomato fill up the width of my wide Arnold Oatnut bread slices. I grilled the Oatnut bread with a little butter in the frying pan, like grilling a cheese sandwich, but the middle was empty. Once the grilled bread cooled I slathered mayo on both slices of the bread where it was not grilled. Then I sprinkled a little salt onto the mayo, along with a good amount of black pepper. Then two thick slices of tomato, one on top of the other went onto one slice of bread. Then I put three layers of fresh basil leaves on top of the tomato and put the other slice of bread on top to close the sandwich. Oh goodness! I was in heaven. It was a little messy as the tomato started to drip the juice, but the freshness of this sandwich was divine. Just thought I'd share

This sandwich sounds absolutely wonderful!! I am going to find some fresh tomatoes today. A friend told me where to find good ones. So, tomato sandwiches for dinner tonight! Thanks for the fantastic idea.

I found some delightful summer tomatoes today. Tonight, we had BLTs. Hardwood smoked bacon, potato bread, thick sliced tomatoes, lettuce, and mayo make a delicious sandwich. We had chips, fresh peppers, cucumber slices, and cantaloupe with the sandwiches.

I love summer tomatoes with cheese, mayo, and good bread. These are my favorite breads to eat with summer tomatoes: baguette, sourdough, rye, pumpernickel, and Italian bread.

I am liking my Oatnut bread. It is wholegrain but soft and yummy. I had the same tomato sandwich last night for dinner, but I was out of fresh basil. I sprinkled dry basil instead on the mayo that was on both slices of bread, and I put the salt and pepper on both sides of each tomato slice. The dry basil was a little different than the fresh, but still very tasty.
I think I am hooked for a while....

Eating a fresh tomato for breakfast. The ones that we got were pretty ripe, so they had to go in the fridge. I hate that, since it messes up the texture. BLTs for dinner tomorrow!

Sandwiches are good for breakfast, too! I had a BLT this morning. I cooked the bacon on a paper towel lined plate in the microwave! Just make sure that the plate can take the heat! A glass pie pan works well. The plate gets extremely hot. Plan accordingly with hot pads and a safe place to set it after you pull it out of the microwave. CAREFULLY pull the bacon away from the paper towels.
