As a child, I wasn't very fond of fenugreek but I love it now. Fenugreek powder comes from roasted fenugreek seeds. The Indian word for fenugreek is "methi".
Fenugreek leaves are available in both fresh & dried forms. It really depends on the recipe, the fresh leaves are slightly bitter & cook up like baby spinach. I love fresh fenugreek leaves with baby potatoes. The addition of potatoes mellows out any bitterness of the fenugreek leaves.
The dried leaves are much more pungent & used more like a spice.
You can grow your own fresh methi leaves by simply planting the fenugreek seeds, it only takes 2 weeks!
