What are your favorite fillings for pita pocket sandwiches? I'd like more ideas. So far, my favs include:
* smoked salmon with avocado salad (fresh lemon juice, cubed avocados, tomato, red onion, salt and pepper). * ground beef, onion, mushrooms, olives, garlic all sauteed in butter. A touch of Worchestershire sauce. A slice of pepper jack cheese, optional. * cottage cheese, cream cheese spread in the pita and then toasted.
Sometimes, I like the pita toasted; sometimes not.

I throw anything at all into a pita, especially salads like chicken, tuna, and ham salads. Sliced meats, grilled veggies....you name it.

Lori, I remember my first pita. It had a creamy cheese spread, lettuce and tomato. I ate it one sunny summer day on a trail above Boulder, Colorado. What a heavenly sandwich!
We had a bunch of pitas that were going stale. Today, I rubbed them with olive oil and sprinkled them with salt. Then, I baked those pitas until they were crunchy. We had lentil soup and open face pitas with Herb Goat Cheese Spread. It was delightful!

I love filling them up with salad with garbanzos, bacon bits, and sunflower seeds and adding a bit of Ranch dressing. Cucumbers in pocket sandwiches really appeal to me.

I also love either crunchy lettuce or spinach and butter lettuce in the salads.

What about a dessert pita? Toasted and then spread with Nutella, sliced fresh bananas and strawberries, topped with whipped cream? A portable dessert.
I had a crepe filled with this and thought because the crepe wasn't sweet either that a pita might do.

I think that a fresh peach would be fabulous! Grill it in butter and sprinkle with cinnamon and sugar. MMMMM.
