This was a lovely sandwich made with Manny's Chicago Deli cooked corned beef. The hot cheese and sweet/spicy sauce made it delightful.

Yesterday for brunch, I had Manny's Deli corned beef on an English muffin with plain mayo and a slice of Campari tomato. It was sooo good.

I love it too, Debbie! For store-bought deli corned beef, this is about as good as it gets. Of course, I truly enjoy that which I cook myself, but it is the end of the quarter, grades are due, IEPs need to be written, and progress needs to be monitored. Honestly, I'm just lucky to have time for a sandwich.

I don't think they sell Manny's corned beef here in the northeast. I never heard of it, but I will have to check around. It sounds delightful.

Costco in the Midwest is selling it. You can also order it from the Manny's website...but only if you are rolling in money. After I saw their sandwich kit prices, the price at Costco seemed even more piggybank friendly.
