My husband is not much of a flavored mayo kind of guy, but he was enthusiastic about it. Me, I just fall face-first into any mayo cup.

However, for those that may not or want a change of pace, the use of simple to prepare compound butters could be the flavor enhancement of choice; butters incorporating ginger or roast bell peppers or sun dried tomatoes or dill or walnuts or teriyaki sauce are just a few of the options.

Compound butters can be absolutely stunning! One of the most memorable eating experiences that I ever had was an herb butter on a perfect hard roll from a French bakery.

I had a nice grilled salmon fillet tonight. I used mayo, stone ground mustard, and a small amount of ketchup as a sauce. Lovely sandwich on sourdough bread.
