Did you know that pizzaiolo refers to a person who makes pizzas? And that pizzaioli sauce is just, well, pizza sauce? Ah, but when you combine this fabulous sauce with chicken and bake it all up, about the only word to describe it is, yummers.
I would say probably 4-6 servings. I used a whole chicken cut up, so of course that gives 2 each of breast, legs, wings, second joints (or thighs). Depends on how hungry everyone is! I've been eating it steadily since I made it on Monday. Enjoy!
Slightly different from your recipe, I used mini chicken breasts and left out the mushrooms but used plenty of small black couchillo olives and large capers.
Family loved it and requested I make it again this week.
